Well, while preparing for the Lifestyle Expo in Castle Rock I decided it was time to expand our line. I decided I wanted some chocolate chip cookies. I'm thinking I should have taken pictures just so you could see the process that I go through to develop a new mix.
First, I had to decide which mix of flours would give me the texture and flavor I was going for. Then, I went to the basics of a recipe to figure out the rest of the mix. It is trial and error until perfection is reached. I kid you not, my first batch of cookies were chocolate chip frisbees. The sugar content was too high and boiled the whole thing in the oven.
Back to work, I was trying to salvage these cookies so my kids could at least eat them and figuring out the correct balance for soft delicious cookies. After a half dozen tries and a pile of cookies on my table I had it. The cookies that came out of the oven this time were a beautiful golden color, soft in the center with a light crunch on the outside. I couldn't have asked for better chocolate chip cookies.

I did more experimenting this week so, be on the look out for recipes for granola and possibly even bagels. The bagels are still in taste test mode.
